Here is What you Need for the Summer Berry Trifle

This recipe can really be tailored to how much you are making- if you are making a very large bowl just get a little more of each item!

2 boxes of sugar free vanilla pudding

2 angel food cakes

1 box of strawberries

2 large containers of blueberries

2 containers of Lite Cool Whip or Coconut Cool Whip

Clear glass bowl -Any bowl will work, like this one from Williams Sonoma

The How To’s

  1. First, you will take the angel food cake and cut it up into inch squares
  2. Next, make the vanilla pudding by following the instructions on the box (mix the pudding mix with water and blend smooth)
  3. Cut up all your strawberries
  4. Now, you will layer the ingredients in the clear glass bowl.
  5. Start with the angel food cake, then add a layer of pudding, then the cut strawberries and blueberries, then the cool whip.
  6. Repeat step five until your bowl is filled.
  7. Top with cool whip and a few berries as a garnish.

I have been really excited to perfect my matcha latte recipe. From looking online, to asking all of you, I think I finally found a great way to make it! Here is how I make my matcha latte:

Products I Used to Make my Matcha Latte

  1. Ceremonial Matcha – using ceremonial grade matcha really makes the latte! I use this one.
  2. Mugs I love the clear walled glasses. These are from William Sonoma but these other mugs are nice from Amazon too!
  3. Sifter– This sifter is one of my Amazon Kitchen Essentials. It really comes in handy when making celery juice, sauces, and obviously matcha!
  4. Blender-I really love our vitamix blender – it has been a great blender and makes things so smooth. If you want one that is at a lower price-point try this one!

What You Need for a Matcha Latte

Makes 1 cup

  •  Coconut Milk
  • 1 Tsp of ceremonial grade matcha
  •  Cinnamon
  •  Honey

The How To’s (It’s Pretty Easy)

  1. First, froth your coconut milk with a frother.
  2. Then, pour in the matcha powder through a sifter (I use this one from Amazon) into a blender. This makes it really smooth.
  3. Next, add in a dash of cinnamon and small squeeze of honey.
  4. Blend all these ingredients together!
  5. Enjoy!

  • One squeeze of agave (healthier than simple syrup)
  •  1 squeezed lemon
  •  A dash of triple sec

As a part of our summer entertaining series, we thought it would be so fun to make some summer cocktails! This next one we are trying, is a skinny margarita! This version is so refreshing and healthier than your average margarita as it does not use a pre-made mix. We made this margarita in these glasses that I found at Crate and Barrel- it comes in a set of eight. Here is what you will need to make it!

What You Need for a Skinny Margarita

Makes 1 drink (but you can double it or triple it)

  • Kosher salt 
  • Lime wedge for rim
  •  1 1/2 ounces (3 tablespoons) silver tequila
  •  3 tablespoons freshly squeezed lime juice (from about 1-2 limes)
  •  Splash of triple sec
  •  1 teaspoon light agave nectar (another teaspoon can be added for sweetness)
  •  Ice

Making a Pitcher?

  • 8 ounces silver tequila — (1 cup)
  •  8 ounces freshly squeezed lime juice — (1 cup, from about 5 medium/large limes)
  •  Splash of triple sec
  •  2 tablespoons light agave nectar — or simple syrup, more if you prefer a sweeter margarita

The How To’s

  1. Pour a thin layer of salt onto a small plate. Rub a lime wedge around the top edge of your glass to moisten it, then dip the glass into the salt so that it sticks to the rim.
  2. Fill your glass with ice
  3. If you are making one or two margaritas, fill a small cocktail shaker with additional ice. Add the tequila, lime juice, triple sec, and agave. Tightly close and shake vigorously for at least 30 seconds (it’s longer than you think). Strain into the rimmed glass over the ice.
  4. For a pitcher: In the bottom of a pitcher, stir together the tequila, lime juice, triple sec, and agave (without ice). Pour from the pitcher into ice filled glasses with salt rim like in step one.

We got this recipe from here but you can really make this your own as we did not follow it exactly!

Who doesn’t love a pina colada? They instantly make me feel like I am on a tropical vacation somewhere (which sounds so nice right now, doesn’t it?) What You Need for a Skinny Pina Colada

Makes 1 drink (but you can double it or triple it)

  •  1 1/2 oz Malibu rum (or to taste)
  • 1/2 a banana
  •  1/4 cup coconut water
  •  1/2 cup frozen pineapple
  •  1 cup ice

The How To’s (It’s Pretty Simple)

  1. First, combine all ingredients into a blender. We use the Vitamix and love it!
  2. Blend until completely smooth!
  3. Serve in a tall glass with a straw and garnish with your choice of fruit!

This drink has been Michael and I’s favorite the past few months. It is SO easy and really good. This one is also super refreshing for summer. What You Need for Bubly & Vodka Cocktail

Makes 1 drink

  •  1 Can of flavored Bubly sparkling water (or any other brand works too)
  • One shot of vodka!
  • Lime juice

The How To’s

  1. First, pour the can of Bubly into your glass
  2. Then, pour your shot of vodka in
  3. Top with a little lime juice
  4. Enjoy!

Espresso martinis are the perfect pick-me-up drink! It gives you a little energy for late nights and taste so good! We made this martini in these glasses from Crate and Barrel. Makes 1 drink (but you can double it or triple it)

  •  1-2 shot of vodka
  • One small squeeze of agave- I think it is best to do this to taste, so start with none and add in a little more each time
  •  1/2 an ounce of coffee liqueur (Kahlua is what we used)
  • 1 espresso shot

The How To’s

  1. First, combine all ingredients into a shaker and shake for 30 seconds
  2. Then, pour into a martini glass and enjoy! Garnish with a coffee bean if you’re feelin fancy!

Melon + prosciutto + mozzarella = AMAZING. I know this combination may be a little interesting at first glance, but it I promise it is worth a try and so good! This recipe was found on delish and I knew it would be a winner for summertime. I think skewers are great recipes that take only minutes to make! Here is What you Need for Melon and Prosciutto Skewers

This will make 12 skewers

1 cantaloupe

12 fresh basil leaves (or you can sprinkle on basil on the top too)

8 oz. mozzarella balls (ciliegine) (you can also use a larger chunk of mozzarella and cut it into cubes)

12 slices prosciutto (folded into small pieces)

Balsamic glaze

The How To’s

  1. First, you will prepare the cantaloupe (it can be orange or green melon). You will cut it in half, and then scoop out all the seeds. You can either use a melon baller and make little balls or you can cut it into chunks of melon. Either way will work.
  2. Next, layer cantaloupe, one basil leaf, mozzarella, one slice of prosciutto folded, and a second piece of cantaloupe until you have 12 skewers.
  3. Drizzle skewers with balsamic glaze and serve!
